Most raspberries ripen just as the early strawberries start to taper off, and what better way to continue enjoying berry delicious fruits? Fragrantly sweet, with a subtly tart overtone and an almost melt-in-your-mouth texture, raspberries are wonderfully flavourful and provide powerful protection. Raspberries have been linked to promoting heart health as well as cancer prevention.

Helpful Hints
Although raspberries are one of the most delicate fruits and should be handled carefully, they are very easy to freeze, and great for pies, shortcake, jams or fresh eating.
- ONLY wash your raspberries when you are ready to use them.
- Sort them quickly, removing any leaves or stems.
- Process or freeze your raspberries the same day that you receive them for maximum flavour and quality.
Keep in mind...Raspberries are perishable and lose their good quality quickly, particularly after washing. Do not soak raspberries in water. For best results, rinse lightly and drain in colander. Drain well and let dry on paper towels or absorbent tea towels.
Freezing Tips
Freeze your raspberries quickly, preferably before washing.
- Spread raspberries on cookie sheets, then place in the freezer.
- When frozen, place frozen berries in plastic freezer bags or rigid plastic containers
- Mark the date, then replace in the freezer.
Before using your frozen raspberries, quickly run them under cold running water. For best results, defrost your raspberries in the original container in the refrigerator overnight. This allows the ice crystals to melt slowly, with better shape retention than defrosting quickly.
